The Cladosporium spp. are among the most common fungi in the world. More than 40 species are known. Cladosporium herbarum and C. cladosporioides are very common species of many ecological niches, and they are found on the vine.
These two species, whose population levels increase as the berries mature, are responsible for olive green rot causing berries to dry out in the vineyard or during storage. The red cabernet sauvignon and chardonnay grape varieties seem more sensitive.
Recently, a study carried out in Chile showed that rot Cladosporium , manifesting late in grapes, could modify the aroma and flavor of wines of Cabernet Sauvignon and Carménère varieties.
